Let me introduce myself.
I'm 48 years old and love cooking, attempting to make my meals as low fat and tasty as possible. When I have company over, they don't even notice that it's low fat - so please don't tell them!
I found out a few months ago that my cholesterol was a little high and am attempting to prepare meals that are low in cholesterol as well.
I have two adult children who have been away from home for over six years. They have always enjoyed my cooking, requesting me to make things when they come home.
When they were living at home, I cooked a meal almost every night. I'm thankful that I was a stay-at-home mom, so I was able to do this for my family.
Once my kids moved out and I was working full-time, I cooked less, attempting easy recipes once in awhile - and when I wanted to cook a meal, I'd just invite friends over.
When my son became engaged, he and his fiancé asked me to make a family recipe book as their wedding present. This consisted of hundreds of family recipes and was quite the undertaking. It was a joy to make.
My daughter and her boyfriend have asked me to make one for them when they get married!
I'm currently getting back into cooking again and trying new recipes on my boyfriend. Some are easy, and some I like to spend a little more time on - it all depends on how much time I have.
Anyway, that's a brief introduction. I hope that you enjoy the recipes and kitchen suggestions in future columns.

Gringo Tacos
This is definitely a family favorite
- 3 lbs. extra lean ground beef or extra lean ground turkey, browned
- 1 (10 oz.) can enchilada sauce
- 1 (8 oz.) can tomato sauce
- 1 Tbsp. chili powder
- 1 can fat free evaporated milk
- 12 6-inch flour tortillas
- 1-1/2 cups reduced fat shredded cheddar cheese
Stir and simmer first 4 ingredients for 5 minutes. Grease a 9 x 13 inch pan. Layer as follows: Meat sauce, 6 tortillas and half of cheese. Repeat layers. Pour milk on top. Bake at 350 º for 40 minutes.
This can be served with baked tortilla chips and salsa.
